Make your favorite coffee cake recipe and turn it into delicious breakfast muffins!

Prepare the recipe for coffee cake (or any type of "cake") according to the recipe directions.

Line large-cup muffin tins with cupcake papers (shown here are the Reynold's Baking Cups, extra large foil).

Fill the paper cups no more than halfway.
If there is any kind of topping that goes on the coffee cake, then allow extra room for that (as shown here with a brown sugar and oatmeal topping).

Bake at the temperature required by your recipe. These will bake faster than one whole coffee cake, so be sure to check frequently.

When done, allow to cool for a few minutes before taking the muffins out of the tins.
Cool until just warm enough to eat...
...and then serve!
