Many people prefer to use bulk yeast, but most recipes call for 1 or 2 packages of yeast (such as Fleischmann's).

One package of yeast = 1-3/4 teaspoons

One-half package of yeast = 7/8 teaspoon (for those of you who don't want to make full recipes of bread that results in two or more loaves).

When you buy bulk yeast, you can extend the shelf-life of the yeast by measuring out the portion that you will likely be using during the course of 4-6 months. Put this yeast in a tightly sealed container (such as a Rubbermaid container) and put it in the coldest spot in your refrigerator.

Tightly seal the remaining yeast, wrap in freezer foil, and put in the freezer. The portion of yeast in the freezer will keep for up to 5 years, depending on how frequently you open, re-seal, and re-freeze it.
