Three Bean Salad*

(*or Four Bean Salad or Five Bean Salad, depending on your preference!)

This was a staple on our summer dinner table while I was growing up...and Poppo and Mom still enjoy it today!

 
You will need:

 

Iron skillet (or electric fry pan)

Spatula

 

Beans: You will need a total of 4 cups, any combination of your choice of green beans, wax beans, kidney beans, garbanzo beans (also known as chick peas), small white beans

 

Italian Dressing (your preferred brand, regular or lite)

Worcestershire Sauce (I prefer Lee & Perrins)

Sweet Relish (your preferred brand)

Onion

Celery

Garlic Powder

Ground Nutmeg

Sugar (or sugar substitute that is suitable for cooking)

Chopped Red Pimentos (optional)

Bacon Bits (optional)

 

 

Directions:

 

Open cans of beans, rinse, and drain. Measure a total of 4 cups of your preferred combination of beans. Set aside.

 

Measure 1-1/2 cups of Italian dressing. Set aside.

 

Measure 1/3 cup of sweet relish. Set aside.

 

Mince 1/4 cup of onion. Finely chop 1/2 cup of celery.

 

In heated skillet (or electric fry pan), add 2 tablespoons of Italian dressing and onions. Sauté onions until the onions are transparent. Add in remaining Italian dressing and beans. Do not allow to boil (you may need to reduce heat after sautéing onions).

 

Add in sweet relish, celery, and the following:

  • 1/4 teaspoon of garlic powder

  • 1/8 teaspoon ground nutmeg

  • 1 tablespoon Worcestershire Sauce

  • 1 tablespoon sugar (or sugar substitute)

Allow for all ingredients to heat for approximately 5 minutes (or until beans are warm, but not too hot to eat). This will greatly enhance the flavor of the salad.

For a nice garnish, and to add some color, you can mix in chopped red pimentos and sprinkle on bacon bits.

This salad can be served warm or cold, depending on your preference.

You can easily make this salad a day ahead of time!

Three Bean Salad makes a great accompaniment to a meal of grilled fish or chicken! Use low sodium beans, reduced fat Italian dressing, and omit bacon bits for a heart healthy meal.
