Poppo's Steamed String Beans

You will need the following:

Iron Skillet with lid - or - Non-stick pot with lid

 

1 pound fresh string beans

1/2 cup water (to start, may need more during steaming)

5 tablespoons extra virgin olive oil (or your preferred olive oil)

1 medium onion

2-3 cloves of fresh garlic

1-2 tablespoons soy sauce to taste (optional) 

Pepper to taste

Salt to taste (use your favorite salt substitute, or eliminate for low-sodium or sodium-restricted diets)

Directions:

Wash string beans. Rinse. Cut off ends and cut in half (or smaller, as you prefer). For a great tip for an easy way to cut off the tips, please see Jan's Tip #9: Keep Kitchen Scissors Handy! (This tip will open in a new window for your convenience.) Set aside.

Peel onion. Cut in half and then slice thinly (or prepare to your preference). Set aside.

Mince garlic. Set aside. (Here's a great site for easy-to-follow directions for mincing garlic: How to Peel and Mince Garlic. Opens in a new window for your convenience.)

Put olive oil in skillet, set to medium heat.

Sauté sliced onion and minced garlic in oil until translucent (onions are transparent-looking).

Add string beans and water to skillet. Cover. Adjust heat so that string beans will steam. Check frequently, stir occasionally. Add additional water as needed, enough to prevent beans from burning (you may have to lower heat setting if beans are burning instead of steaming). Steam until beans are desired tenderness (approx 25 minutes for "limp" string beans). Remove skillet from stove, set on trivet or potholder to avoid burning the countertop.

Add salt and pepper, as desired. Add soy sauce if desired (this adds a nice additional flavor).

Serve with meal.

Poppo's Steamed String Beans go great with chicken or fish! Serve with rice and a nice greens salad for a well-balanced meal.
