Poppo’s Vegetable Stir Fry

Poppo says that this is “…ummmm, delicious!”

You’ll need:

  • Cooking oil (Poppo recommends an oil other than olive oil)
  • Soy sauce
  • Wok, large skillet with 2-inch sides, or cast-iron dutch oven

Ingredients:

Vegetables suitable for stir fry, such as:

  • Onions (3 good-sized)
  • Celery (3 stalks)
  • Carrot (1 good-sized)
  • Bell Pepper (1)
  • Cabbage (2 cups, shredded)
  • Mushrooms (sliced, about 1 cup)

Directions:

Prepare vegetables:

  • Cut onion into 1/4-inch slices
  • Thinly slice celery, on an angle
  • Cut carrot lengthwise, cut in half (so that you have four pieces), and then slice thinly
  • Clean bell pepper, cut into 1/4-inch slices, then cut slices in half
  • Shred cabbage (see Jan’s Tip 16: How To Shred Lettuce or Cabbage)
  • Cut mushrooms into slices or bite-sized pieces

Prepare wok:

  • Put oil in wok (skillet or dutch oven)
  • Heat to medium high
  • Add all ingredients except mushrooms and soy sauce
  • Stir or flip repeatedly to keep vegetables from burning
  • Cook until veggies are soft (or anywhere from firm to soft, depending on your preference)
  • Add mushrooms and soy sauce, stir to mix, cook only long enough to warm up entire stir fry mix

 Serve as is or over cooked rice.
