Jan's Dough: Create Sourdough Starter Recipe

This recipe uses Jan's Dough Sourdough Starter. If you haven't already created your own Sourdough Starter, please see the link to the left for complete instructions. The process will take about 13 days before you have a completely activated starter. This recipe makes 1 extra large pizza (thick crust) or makes 2 medium pizzas (thick crust). This recipe is accompanied by a fully illustrated tutorial that you may find helpful if you've never made homemade pizza before. Go to: You'll need:
Directions: In a large mixing bowl, combine the following:
Allow yeast to proof for 5 minutes. You can use this time to pre-measure the ingredients you'll need next. When yeast is proofed, stir in with wooden spoon:
The olive oil won't actually completely blend in, but do continue to stir until the oil is separated into tiny globules. Stir in:
You should be able to hand stir in just about all of the flour. However, if there is a little left loose in the bottom of the bowl, that's OK. You'll be able to knead it in. Turn out dough onto a mound of 1/2 cup Regular Flour on a pastry cloth (or other well-floured surface). Knead for about 5 minutes, until dough is smooth and dry. If you've never kneaded dough before, you might find my illustrated tutorial How To Knead Bread Dough helpful. Roll out the dough into a pizza crust (or use your well-floured fingertips to push and pull it into a round shape). Be sure to review the tutorial for a nice illustration of this process. Lay dough onto pizza pan, and let rest for about 10 minutes. I usually heat the oven at this point, and put the pizza pan on top of the stove. This helps the crust to rise a little. Heat the oven to 425*. Bake only the pizza crust for about 7 minutes. I usually turn the crust after 3-4 minutes so that it bakes evenly. Remove the pizza crust from the oven and place pizza pan on a pizza stone (or potholders or cooling rack). Build the pizza, starting with sauce and then adding the toppings of your choice. The illustrated tutorial gives you a nice visual of this process. Return to the oven and bake for 13-15 minutes. Remove from oven, place pan on pizza stone (or cooling rack), and sprinkle on cheese. Return to the oven for about 3 minutes. Remove from oven. Slide the pizza off of the pizza pan and onto a corn-meal covered pizza stone. If you are not using a pizza stone, then simply leave the pizza on the pizza pan, and put the pan on a cooling rack. Allow to cool for about 3 minutes. Cut with pizza cutting wheel (or a pair of kitchen shears---which work great!). Enjoy!!! |
