Recipe: Corn Fritters

 

This recipe is Mom Tested…and and the last time that I had them, they were just as tasty as I had remembered!

 You will need:

  • Skillet (or electric fry pan)
  • Large mixing bowl and mixing spoon

 Ingredients:

  • 2 cups of cooked corn ( Mom uses leftover cooked "corn on the cob")
  • 1 well-beaten egg
  • 1-1/2 teaspoon sugar
  • 1/3 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon melted butter (or margarine)
  • 1/4 cup flour
  • 1/2 teaspoon baking powder

 Directions:

  • Mix all ingredients
  • Drop by spoonful (any size you want) onto hot greased skillet and flatten if necessary
  • Cook until browned on one side, then flip and brown the other side

Mom’s Tip: When the fresh corn is available, buy extra ears, cook, shell, and freeze the corn, 2 cups per bag, for future batches of Corn Fritters.
