Recipe: Mom's Applesauce Cake Mom’s Applesauce Cake

You will need: Electric mixer (can be made by hand if you opt to do it that way) Mixing bowls and measuring spoons and cups Flat-bladed spatula 9 x 13 inch loaf pan No-stick cooking spray (use butter flavor!) Cake tester (or a couple of wooden toothpicks)
Ingredients: 2 sticks of Regular Oleomargarine (preferably 100% corn oil) 1-1/2 cups Sugar 3 Eggs 2 cups Applesauce (Mom's Applesauce is best, otherwise, your favorite brand) 3-1/3 cups Regular Flour (not Bread Flour) 2 teaspoons Baking Soda 1 teaspoon Cloves or Nutmeg 1 teaspoon Cinnamon 1 cup chopped Walnuts 1 cup chopped Raisins
Mix dry ingredients in a separate bowl and set aside. Chop walnuts and raisins. Set aside. (See Jan’s Tip #11 for a simple and quick way to making chopping raisins easy! Go to http://www.jansdough.com/Tips/Tip11.htm.)
Thoroughly cream oleo and sugar. Add eggs, one at a time. Mix until eggs are completely blended in. Mix in dry ingredients and applesauce, alternating approximately 1/3 of each at a time. Stir in chopped nuts and raisins.
Lightly grease bottom of 9 x 13 inch loaf pan with non-stick cooking spray and dust with flour. Pour cake batter into pan. Use a flat-bladed spatula to spread batter evenly in pan. Bake at 350 degrees for 35-45 minutes until cake tester comes out dry. If your oven doesn’t bake evenly, turn pan at 10-minute intervals to insure even baking.
This cake tastes absolutely the best when served warm from the oven! I oughta know…I’ve eaten enough of my mom’s applesauce cake!
This cake freezes nicely. When the cake is completely cool (after you’ve enjoyed a nice warm hunk of it), cut into squares (2-inch, 3-inch, or 4-inch, depending on your portion preference). Wrap each piece in waxed paper (I prefer Reynold’s CUT-RITE), and then put into Ziploc® bags. Freeze flat. Thaw before eating, or pop in microwave to thaw/warm!
